What is Jelly?
Fruit jelly is prepared from fruit juice and is translucent and clear in appearance. It is made by using pectin which naturally occurs in the fruit. But when there is not a sufficient amount of pectin in the fruit then it needs to be added to the fruit. The process of making Jelly is quite similar to jam. The only difference between the preparation of the two is that Jelly involves filtering out the pulp as only the juice is required in the preparation. The most important thing to make the consistency of the final product is that during filtration nothing should be forced while straining the pulp. To prepare jelly, the pectin is extracted and for that, the fruit is heated until it is soft. After that, it is strained to separate the juice from the pulp of the fruit. A good jelly is that which is sparkling and clear in appearance. It should hold angles when it is cut and should tremble when it is moved.
What are Preserves?
Preserves also known as fruit preserves are prepared by using whole or cut fruit pulp or by crushing the fruit. They are commonly known as fruit jams as well. They can be made by boiling the fruit pulp so that all the bits are removed. Preserves can have an even consistency and they are soft and have a bright color. They have no free liquid to flow so you can say they have a thick consistency. However, sometimes jams and preserves are also differentiated from each other because some of the preserves are also made along with the seeds of the fruits. Some preserves are made from small seeds such as seeds of guava and fig. A thick spread is produced by cooking the pulp with pectin and sugar. Commercials, as well as homemade preserves, can be prepared and sealed in a can for long-term use.

Major Differences Between Jelly and Preserves
The following are the major differences between Jelly and preserves as mentioned below:
- Fruit preserves are also known as fruit jams as they are made by using whole or cut fruit pulp or by crushing the fruits whereas fruit Jelly is made from the juice of the fruits so the fruit pulp is filtered to extract the juice.
- Preserves have an even consistency and are soft, bright in color, and have no free liquid whereas jelly is sparkling and clear in appearance and should hold angles when it is cut and should quiver when moved.
- Another major difference between Jelly and preserves is how much of the original fruit is used to make them. Jelly has a smooth consistency and is made by crushing the fruit to remove the chunky leftovers whereas preserves use most of the fruits and are simply chopped into smaller pieces.
- Jelly is transparent in appearance whereas preserves are not transparent as they have large bits of fruit suspended in it.
Conclusion
So overall, both jelly and preserves are made from fruits and can be stored for long-term use. However, the main difference between Jelly and preserves is that Jelly utilizes the juice of the fruit whereas preserve utilizes whole fruit or large chunks of fruits.
