Major Differences between Idaho and Russet Potatoes

The major differences between Idaho and Russet Potatoes are as mentioned below: 

  • Idaho potatoes are collectively a term used for a breed of potatoes that are cultivated in the county of Idaho whereas russet is a particular breed of Idaho potato. 
  • Idaho potatoes are specifically grown in the state of Idaho whereas russet can be grown anywhere in familiar environment conditions. 
  • Idaho potatoes are good for baking while russet potatoes are suitable for mashing and frying. 
  • Idaho potato is a trademark that is set up by the Idaho Potato Commission whereas Russet Potatoes are also grown in Idaho but are a separate breed.

On the other hand,  the optimal temperature for growing russet potatoes is 24°C whereas the optimal temperature for growing it to tuber’s maturation is 20°C.
