The shallow and deep water hakes are mostly high in demand and they are primarily caught through trawling. They are generally consumed either fresh or frozen, like a fillet or steak, and also as salted or smoked.
What is Pollock?
Pollock is a variety of white fish which belong to the genus Pollachius. They are actually available in two species which are Pollachius and Virens but both are commonly referred to as Pollock fish. They can grow up to three feet in length and weigh about 40 lbs. You can see the difference between the two species by their jaw lengths as the Pollachius have longer lower jaws. The color of the Pollachius is brown or golden hue while Virens have a silver hue with a greenish tint around its back. There are other species also which are referred to as Pollock but they do not belong to the genus Pollachius. These fishes include Alaskan Pollock and the Norwegian Pollock and they both belong to the genus Theragra. Pollock was not popular as white fish until recent years because of the overfishing of the Cod and Haddock. But recently Pollock has increased in demand for being simply an alternative to Cod and Haddock fish. It was primarily popular in Norway before but now it has a greater consumption in Germany, Korea, and the UK. It can be either consumed fresh or frozen and is mostly cut as fillets. Additionally, it is also prepared as minced, smoked, or salted.
Major Differences Between Hake and Pollock

- There are about 12 species of Hake fish while Pollock has only two that including the Alaskan and Norwegian Pollock which are actually of a different genus.
- Hake is famous in different areas of Europe like France, Portugal, Italy, and Spain while Pollock is popular in areas like Alaska and Norway but now is in demand in areas like Germany, Korea, and the United Kingdom.
- Both Hake and Pollock are distributed in the same form which is either fresh or frozen but Pollock is mostly cut in fillets and steak and can be prepared as salted or smoked while Hake can also be served as steak or fillet and is served either salted or smoked.
